Preparation

Rub roast with kitchen bouquet, brown all sides in pan over medium heat.

take paring knife and make slits on top and sides of roast, insert garlic and rosemary in slits. sprinkle fresh ground pepper

insert oven-proof thermeter, so tip is in thickest part of roast. cover and bake at 325, until therm reaches 175.

after hour of baking, can add vegetables and chicken broth.

total bake time is 2 1/2 to 3 1/2 hours
