Ingredients

1/2 pound Green or Brown Lentils, rinsed.

3 cloves of garlic, pressed.

4 Roma tomatoes, diced.

1 small onion, diced.

pinch marjoram.

1 bay leaf.

oregano to taste.

thyme to taste.

salt to taste.

crushed black pepper-optional.

Preparation

Add lentils to crockpot. cover with water until it is about 1-1/2 inches above the lentils. Add all other ingredients. Turn on low. Leave all day, or until lentils are very tender. In final hour of cooking, you may wish to add a second pinch of the oregano, salt or thyme, but suit your own taste. Serve plain or with bread, potatoes, or rice. You may also wish to top servings with a little fresh ground black pepper or shredded cheddar cheese.
