Ingredients
2 T. Dijon mustard
2 T. balsamic or red wine
vinegar
6 T. olive oil
3 T. fresh basil, thinly
sliced
salt and freshly ground
black pepper to taste
2 c. poached or grilled
chicken breast, diced
1/2 "
4 tomatoes, skinned,
diced 1/2 "
6 slices bacon, cooked
crisp, and diced 1/2 "
2 c. washed spinach,
mesclun, arugula, or
other salad leaves,
coarsely chopped
4 slices multigrain bread
or, country bread
Preparation
- To make the dressing, mix together the mustard and vinegar in a bowl.. Slowly pour in the olive oil while mixing. Add the basil and season with salt and pepper to taste.
- Stir in chicken, tomatoes, bacon and salad leaves and toss gently to coat with dressing.
- Assemble chicken salad on thick slices of multigrain bread, country bread.
