Ingredients

2 T. Dijon mustard

2 T. balsamic or red wine

vinegar

6 T. olive oil

3 T. fresh basil, thinly

sliced

salt and freshly ground

black pepper to taste

2 c. poached or grilled

chicken breast, diced

1/2 "

4 tomatoes, skinned,

diced 1/2 "

6 slices bacon, cooked

crisp, and diced 1/2 "

2 c. washed spinach,

mesclun, arugula, or

other salad leaves,

coarsely chopped

4 slices multigrain bread

or, country bread

Preparation

  1. To make the dressing, mix together the mustard and vinegar in a bowl.. Slowly pour in the olive oil while mixing. Add the basil and season with salt and pepper to taste.
  2. Stir in chicken, tomatoes, bacon and salad leaves and toss gently to coat with dressing.
  3. Assemble chicken salad on thick slices of multigrain bread, country bread.
