Ingredients
1 jar chunky spicky chutney
1 tsp. salt
1 tsp. dried oregano
3/4 tsp. garlic powder
1/2 tsp. freshly ground pepper
3 lb. boneless pork loin trimmed
cooking spray
Preparation
Preheat oven to 425 degrees.
Melt chutney in microwave.
Combine salt, oregano, garlic, and pepper. Rub evenly over pork.
Place pork on a rack coated with cooking spray. Place in a shallow roasting pan.
Bake at 425 for 30 minutes then spread chutney evenly over pork.
Bake until thermometer registers 145. - approx. 1 hour and 15 minutes. Let stand 10 minutes before slicing.
