Ingredients
1 large bunch green market kale (tastiest and prettiest with a mix of kale varieties)
1/2 small onion
or
1 large shallot
1 tbsp olive oil
1/4 cup cider (apple, pear or mixed)
Preparation
Heat oil in large skillet or wok. Add onions/shallots and saute at medium heat until tender (3-5 minutes). Wash kale and remove tough stems. Add to pan and saute, stirring often, until it cooks down quite a bit. Add cider, stir, and saute until kale is tender.
