Ingredients

2 cups cilantro leaves

1 cup parsley

3 T lime juice

1 cup Trader Joe’s chile lime cashews or regular roasted cashews will work also

1/2 cup Olive oil

1 tsp. salt

1 tsp. black pepper

1 tsp. cayenne pepper

1/2 cup grated asiago cheese

Preparation

process in food processor until smooth and the consistency of dip. Add more olive oil if too thick or more cashews if too thin.

Put into 4- 1 cup freezer containers, refrigerate 1 and freeze the rest. A little goes a long way. Keeps in refrigerator up to 2 weeks and in freezer for months
