Ingredients
16 large shrimp, uncooked, deveined
Juice of 2 limes, or about ¼ cup of juice
1 clove of garlic, chopped
¼ tsp black pepper
2 tsp olive oil
10 cherry tomatoes, halved
1-2 cups fresh spinach
2 tbsp fresh cilantro, chopped
Preparation
In a glass measuring cup, add the lime juice, garlic, pepper, olive oil, and stir. Place the shrimp in a medium bowl and pour the lime mixture over the shrimp.
Stir fry shrimp with tomatoes until shrimp are just cooked through. Remove shrimp. Continue cooking until the pan juices are thickened a bit. Toss in fresh spinach and cook until it wilted. Toss in cilantro and shrimp and heat through.
