Ingredients
bunch of cilantro, take off stems please!
4 cloves garlic
mexican hard cheese, Cotija
corn oil
hand full of pistachio nuts
1/4 jalapeno
1/2 teaspoon of red chili flakes
Preparation
Add everything but the oil in a food processor and blend…start slowly pouring in the oil until that familiar smooth texture arrives. I like to serve it on simple homemade pasta. for a really nice touch, add slices of a spicy chicken sausage (like Amy’s brand). Don’t forget to serve it with mexican beer or margs!
