Ingredients
3 eggs
1 cup milk, room temp
1 cup bread flour
2 1/2 tablespoons unsalted butter, melted
1/2 teaspoon salt (I add 1/4 for lower sodium diets)
1 teaspoon cinnamon
vegetable shortening for greasing pans.
Preparation
Combine and whisk dry ingredients and wet ingredients separately. Put together and whisk well. Mix will be runny, cover and let sit while you preheat oven 400 degrees (~ 10 min).
Heat non-stick popover or small muffin pan for 2-5 minutes in oven. Carefully take out and grease pan (if not non-stick).
Fill cups half full and bake for 40 minutes. Do not open oven.
Serve immediately, hot, with butter and selection of jams.
