Ingredients
1 egg white
1/2 tsp salt
1 tsp cinnamon
1/2 tsp cloves
1/2 tsp allspice
1/2 cup sugar
3 cups pecans
Preparation
Beat egg white until it just begins to become frothy, not entirely white, foamy and stiff. Add salt, cinnamon, cloves, allspice and sugar. Mix well. Add pecans and stir to coat the pecans. Spread pecans onto a buttered cookie sheet and bake at 250º for 1 hour. Remove from oven and allow to cool. Break apart large clusters, if desired. 1/4 to 1/2 tsp of ginger can also be added to this recipe for a little extra kick of flavor.
