Ingredients

8 plain flour tortillas

1 1/2 cups of fresh strawberries

2 nectarines or apples

Juice of 1/2 a lemon

Cinnamon sugar

2 tbsp honey

1/4 tsp cinnamon

1/4 cup fresh mint, chopped

Preparation

Salsa:

Dice fruits and mix together in a bowl. Add cinnamon, mint, lemon juice and honey and mix together. Store in the fridge in an airtight container for at least a couple of hours, or overnight to allow flavours to blend.

Tortilla Chips:

Preheat oven to 425 degrees. Lightly brush tortillas with water. Sprinkle tortillas with cinnamon sugar. Cut into chip-sized wedges. Bake on a non-stick baking sheet for 5-7 minutes, or until golden. Allow to cool before serving.
