Ingredients
Zest and Juice of 2 Organic Lemons
13 Organic Plums
1/3 cup Purified Water
2 Cinnamon Sticks
3 T Agave (or honey)
3.5 cups Sugar in the Raw
Preparation
- Add Lemon Juice and Zest to a large, heavy bottom stock pot.
- Peel, Pit, and coarsely chop the Plums - I like to use a potato peeler to peel the plums - add chopped plums to your pot.
- Add Water, Cinnamon Sticks, and Agave to your plum pot
- Place pot over medium heat, and gently heat the plum mixture for about 5 minutes to release the juices.
- Add the sugar, and stir to dissolve. Make sure the mixture is not boiling when you add the sugar, or the sugar will crystalize.
- Once sugar is completely dissolved slowly increase the heat to achieve a gentle boil.
- Gently boil for 30 - 45 minutes, or until the set point has been reached. I test for a good set by adding a teaspoon of the jam to a chilled plate, and return the plate to the fridge for 2 minutes. If, after 2 minutes, your jam crinkles when you push it with your finger, your jam is set.
- Add jam to sterilized jam jars and process for 10 minutes in a hot water bath.
