Ingredients

1 tablespoon olive oil

10 ounces chicken breast cut in small pieces

2 scallions, chopped

Juice of 1 medium orange, about 1/3 cup

Juice of one large lime, about 1/4 cup

3 stalkes bok choy, chopped

10 ounces fresh spinach

3 tablespoons cillantro (optional)

salt

Preparation

Saute chicken, ginger, scallions. Add juice and simmer 1 minute. Add bok choy, simmer then add spinach.
