Ingredients

¾ cup water

¼ orange juice

2/3 cup cous-cous

½ tsp. ground cumin

½ tsp. ground coriander

grated peel from one small orange

salt and pepper

Preparation

  1. Combine water and orange juice in a saucepan. Bring to boil.
  2. Stir in cous-cous. Cover and remove from heat, let stand 5 minutes or until all liquid is absorbed.
  3. Fluff with a fork.
  4. Mix in cumin and coriander, orange peel. Add salt and pepper to taste.
