Ingredients
4 skinless, boneless chicken breasts
1 3/4 cups chicken broth
1/2 cup orange juice
2 cloves of garlic, chopped/minced
1 cup uncooked regular long grain rice
3 tbsp. chopped fresh parsley
sauteed orange slices
Preparation
Cook chicken in medium nonstick skilled over medium high heat for 10 minutes or until brown. Set chicken aside. Add the broth, orange juice, garlic, and rice. Heat to a boil. Cover and cook over low heat 10 minutes. Return chicken to skillet. Cover and cook 10 minutes or until chicken and rice are cooked. Stir in parsley. Garnish with sauteed orange slices.
