Ingredients
1 pork tenderloin
¼ tsp coarsely ground pepper
1/3 cup orange marmalade
2 TBS fresh chopped mint (optional)
2 TBS low-sodium soy sauce
2 cloves minced garlic
Preparation
Trim fat from pork tenderloin (if there is any). Cut horizontally into two 4oz pieces. Cut a lengthwise slit down the center of each tenderloin piece two-thirds of the way thru the meat. Flatten each piece and sprinkle w/coarsely ground pepper.
Combine marmalade and next three ingredients in a small bowl and stir well. Brush marinade over tenderloin -reserving marmalade mixture. Cook tenderloin on the grill to an internal temperature of 160 degrees - turning once or twice. Place remaining marmalade mixture in sauce pan over medium heat and cook one minute. Drizzle warm mixture over meat.
