Ingredients

4 salmon portions

1/2 cup of orange juice

1/4 cup of balsamic vinegar

1 tablespoon of extra virgin olive oil

2 cloves of finely chopped garlic

1 tablespoon fresh, finely chopped rosemary

1/8 teaspoon ground black pepper

Preparation

  1. Preheat oven to 400F
  2. Place orange juice, balsamic vinegar, olive oil, chopped garlic, rosemary and pepper in a large bowl and mix well.
  3. Submerge salmon in mixture and refrigerate for 30 mins to an hour.
  4. Remove salmon steaks from marinade and place on baking dish.
  5. Bake for 8 - 10 mins per inch of thickness or to taste.
