Ingredients
juice and zest of 1 medium orange
juice and zest of one lime
1 teaspoon olive oil
1/8 teaspoon salt
2 6oz. halibut fillets
1 medium orange cut into thin rounds, seeds removed (for garnish)
Preparation
Prepare grill or oven (450 degrees).
Whisk together orange juice and zest, lime juice and zest, olive oil and salt in a shallow pan large enough to hold the fish fillets. Add the fish fillets and turn to coat with the marinade. Let sit for 20 minutes. If grilling the fillets, grill the orange slices while the fish marinates. Discard marinade. Grill or bake for 10 minutes per inch of fish or until fish is done. Garnish fillets with orange rounds.
