Ingredients

zest and juice of 1 orange

zest and juice of 1 lime

1 tsp sugar

1/4 cup vegetable oil

1/4 cup dark puerto rican rum

4 finely chopped garlic cloves

2 tbsp chopped fresh oregano

2 tsp coarse salt

1/2 tsp ground pepper

2 pounds large shrimp, peeled & deveined

Preparation

Combine the orange and lime zests, juice, sugar, oil, rum, garlic, oregano, salt and pepper in a large bowl. Add the shrimp and marinate for 30 minutes.

Thread the shrimp on skewers and grill until shrimp are opaque (about 3 minutes per side). Remove from heat and serve immediately.
