Ingredients
1 lb. shrimp
cleaned & peeled. 1 lg.lemon; 1/2 C good virgin olive oil; 1 T Worchestersire Sauce; 1/4 C Rice vinegar. 1 C canned pineapple chunks; 1 lg. orange
sectioned & cut into chunks; 1 C strawberries
cleaned & stemmed.
Preparation
Mix marinade & add shrimp & fruit chunks and refrigerate for 30-45 min. Remove from bowl & place on skewers, alternating fruits & shrimp in a pleasing pattern. Heat grill pan and place skewers on ’til shrimp is opaque, turning once ’til cooked through. Place on platter lined with lettuce greens & serve with Rice and a fresh vegetable.
