Ingredients

1 pound peeled shrimp

2 pink grapefruit

1/2 C mayonnaise

2 t fresh lime juice

1 T soy sauce

1/2 English cucumber

1 package edemame beans

8 C salad greens

2 T toasted sesame seeds

Preparation

Cook shrimp if necessary, 2-3 min. Segment grapefruit and squeeze the left overs to get 1 T juice. In a medium bowl, whisk together the grapefruit juice, mayonnaise, lime juice and soy sauce. Mix in the shrimp, cucumber and beans. Arrange the salad greens and grapefruit segments on four plates, top with shrimp mixture and garnish with sesame seeds.
