Ingredients
2/3 C. semi-sweet chocolate chips
1 C. cream or milk
2-3 T. sugar (can 1/2 sugar, to taste)
1 whole egg and 2 egg yolks, slightly beaten
1 1/2 T. dark rum
Preparation
- Place chocolate chips and cream or milk in saucepan and heat gently to melt chocolate completely. Stir in sugar.
- Cool slightly, then wisk constantly to blend in slightly beaten egg and yolks.
- Stir in rum, then strain through fine mesh sieve.
- Pour into ramekins and set them in baking dish. Add boiling water to 2/3 up sides of cups. (I set the pan on oven rack and then add water).
Bake at 350 degrees for 20-25 min or till set. Chill in frig. Serves 4, recipe doubles well.
