Ingredients
2 - 8 ounce cans of minced clams (do not drain)
2 tsp. lemon juice
1 medium onion, minced
3/4 cup melted butter
1 tsp. dried oregano
3 to 4 tsp. fresh parsley, chopped
3/4 cup seasoned Italian breadcrumbs
Strips of cheese: provolone, sharp American or Mozzarella
Parmesan cheese
Preparation
h Preheat oven to 350 degrees. h Mix all ingredients except the cheeses and pour into greased 8" pie pan or other oven proof-baking dish. h Place cheese strips in lattice pattern on top of the clam pie. h Sprinkle liberally with Parmesan cheese. h Bake 20 minutes or until bubbly. h Let pie sit until firm and serve. h This may be assembled a day ahead and then baked just before serving.
