Ingredients
2 lb. carrots
4 cup chicken broth
1/4 cup flour
1/4 cup butter
1/2 tsp. salt
1/8 tsp. cayenne pepper
2 cups half & half
Preparation
Cook carrots for 20 mins. Pour carrot broth and the carrots in a bowl mash and set aside. In a large bowl, add butter, flour and stirring for 3 or 4 minutes. Add mashed carrots, salt and cayenne pepper. Slowly pour chicken broth (10 minutes) add half & half, top with croutons.
