Ingredients

1 lb. mushrooms, sliced

6 tbsp. butter

1 large onion, chopped

4 tbsp. flour

salt and white pepper

3 cups chicken stock

2 cups thin cream

1/2 cup dry sherry

16 dashes Angostura Bitters

Preparation

Saute mushrooms in butter. when half done, add onions and saute until golden. sprinkle flour on top and stir until it is absorbed. Add stock. Bring to boil. Lower heat and simmer 20-25 mins. Add cream, sherry, salt, pepper and bitters. Heat without boiling.
