Ingredients

FOR THE SWEET POTATOES:

5 sweet potatoes

1/4 tsp salt

1/4 cup butter, softened or melted

2 eggs, beaten

1 tsp vanilla

1/2 tsp cinnamon

1/2 cup sugar

2 Tbsp cream

FOR THE TOPPING:

1/4 cup butter, softened

3 Tbsp flour

3/4 cup brown sugar

1/2 cup pecans, chopped

Preparation

Preheat oven to 350.

Bake or boil the sweet potatoes until softened, about 40 minutes. When cool, peel and mash.

Combine the mashed sweet potatoes and the ingredients listed above, and transfer to a 9 x 13 inch greased baking dish.

Combine the ingredients listed above for the topping, using fingers or pastry blender. Sprinkle over the sweet potato mixture.

Bake 30 minutes until topping is crisp and lightly browned.
