Ingredients

•1 egg yolk

•1 1/2 tsp fresh lemon juice

•1 tsp vinegar (Ones to try: White, white wine or apple cider vinegar.)

•1/4 tsp Dijon mustard

•Sea salt, to taste

•1/4 cup extra-virgin olive oil

Preparation

In a food processor, blend first 5 ingredients. With food processor running, slowly pour in oil. For best results, chill before serving.
