Ingredients
1 tsp olive oil
3 minced garlic cloves
1 leek washed and thinly sliced
2 large bunches of spinach coarsley chopped
1 cup light ricotta cheese
1/4 tsp salt
1/4 tsp nutmeg
Preparation
cook garlic and leek in olive oil until soft. Add spinach and cook until wilted. Place in a food processor then cool. When cool mix in ricotta and spices.
