Dressing-

300 g pkg soft tofu

2-3 cloves minced garlic

2 anchovies chopped

1/4 cup lemon juice

3 tbsp olive oil

1 tbsp dijon mustard

1/2 tsp salt

Salad

2 cups broccoli florets

1 roasted red pepper sliced

1 head romaine chopped

1/2 cup shredded basil

1/2 cup low fat feta

Preparation

for dressing whirl all ingredients in a food processor

For salad steam broccoli. Toss with remaining ingredients.
