Ingredients
2 cans (12 oz) vegetable juice
1 cup chicken stock
1 clove minced garlic
2 cups vegetables, fresh or frozen
2 cups precooked chicken or other precooked meat
2 tsp sugar
1 cup dry cous-cous
Preparation
In a large skillet over medium heat combine vegetable juice, chicken stock, and garlic and bring to a boil. Add vegetables and return to boil, cooking 2 minutes for fresh or precooked vegetables, 6-8 minutes (or per package directions) for frozen vegetables. Add chicken and sugar and stir. Add cous-cous, stir to combine well and simmer 2 minutes. Remove from heat and let stand 5-10 minutes until liquid is absorbed.
