Ingredients
1 medium egg
2 slices reduced calorie whole-wheat bread
2 tsp butter
2 tsp dijon mustard
1 oz cheese of your choices, shredded or sliced
1 small tomato, thinly sliced
3-5 fresh basil leaves, washed and roughly chopped
1 thin slice of red onion, chopped or sliced in half
salt and pepper to taste
Preparation
Heat cast iron or non-stick skillet over medium heat. Fry the egg (use some cooking spray if necessary to prevent sticking). As egg cooks, butter one side of each slice of bread, and add mustard to opposite side of one of the slices. Assemble your sandwich, including the fried egg in this order: Bread (butter side out) Cheese Tomato slices Basil Red onion Salt and pepper to taste Fried egg Bread (butter side out)
Heat the sandwich on low to medium heat (in the same skillet you used to fry the egg) until golden-brown. Be careful when flipping the sandwich so that it doesn’t fall apart. Let cool about 1 minute and enjoy! Serving Size: Makes 1 sandwich
