Ingredients

3 tbl white-wine vinegar

2 tbl finely minced shallot

1 tbl dijon mustard

1 tsp ground pepper

1/4 tsp salt

3 tbl olive oil

Mixed salad greens

8 oz shredded cooked chicken breast

2 hard boiled eggs

2 medium tomatoes, diced

1 large cucumber, seeded & sliced

1 avocado, diced

2 slices cooked bacon, crumbled

1/2 cup crumbled blue cheese

Preparation

  1. Whisk vinegar, shallot, mustard, pepper & salt in a small bowl to combine. Whisk in oil until combined.

  2. Combine all salad ingredients and toss with dressing.
