Ingredients
1/2 cup unsalted butter (one stick)
1 cup sugar
2 eggs
2 Tablespoons blackberry jam or spread
6 Tablespoons cocoa
2 Tablespoons oil
2 teaspoons vanilla
1/4 teaspoon salt
3/4 cup flour
Preparation
Preheat oven to 350 degrees. Grease or line an 8 inch square baking dish with parchment paper. Beat sugar and butter until creamy then gradually add the eggs, beating until the mixture is smooth and fluffly. Add the jam, cocoa, vanilla and oil and whisk to combine. Then add the flour (with salt mixed in) in 2 or 3 parts, mixing well after each addition. Pour batter into pan and bake for 20-25 minutes. Let cool 10 minutes before slicing.
