Ingredients
1 cup ground dried, unsweetened coconut
1/2 cup ground almonds (or almond flour)
1/2 cup whole wheat flour
1 Tbsp baking powder
1 cup coconut milk (Lite OK)
1 tspn agave
1 Tspn vanilla
2 large eggs
1 Tbsp brown sugar
3-4 dates chooped
Preparation
Mix all dry ingredients. on stove heat coconut milk and agave, stirring continuously until agave is completely incorporated into coconut milk (remove before it comes to a boil boil). Let cool a bit. Add vanilla and brown sugar to coconut milk. Mix into dry ingredients and then add well beaten eggs and chopped dates.
Let batter sit for 20-30 minutes (so flours absorb moisture.) fry in butter.
