Ingredients
3 Tablespoons Sugar
6 Tablespoons Flour
1/4 teaspoon salt
2 Cups milk
2 egg yolks, slightly beaten
1 package coconut
1 Tablespoon butter
1 1/2 teaspoon vanilla
2 egg whites
4 Tablespoons sugar
1 baked pie shell
Preparation
Combine sugar, flour and salt in a double boiler. Add mild and egg yolks, stir until smooth.
Add 1 cup of coconut. Cook over boiling water 5 minutes or until thickened stirring constantly. Cover and cook 10 minutes longer. Remove from heat and add vanilla and butter.
Beat the egg whites until foamy, add 4 Tablespoons of sugar gradually and beat until stiff. Fold into hot mixture.
Cool (can be cooled in fridge). Turn into pie shell. toast remaining coconut and sprinkle on top.
