Ingredients

1 1/2 cups coconut milk

1-2 T red curry paste

3 T light brown sugar

1 1/2 T soy sauce

1/2 T grated ginger

1 T chopped cilantro

1 T chopped basil

1 T lime juice

8 oz assorted vegetables like potato, carrot, onion, etc. diced

1 cup button mushrooms, diced

1 cup frozen green peas

Preparation

Place first 5 ingredients into a medium sauce pan and bring to a boil. Reduce heat and simmer 5 minutes. Adjust the seasoning with cilantro, basil and lime juice. Add vegetables, simmer an additional 5 minutes and serve with rice.
