Ingredients
Brown Onions, Julienne x 8.
Lemon Grass x 6
Coriander, Bunch x 2.
Green Curry Paste tub x 2
Spinach leaf’s, Washed x 1 box
Coconut Cream, Tinned x 12
Water x 500 ml
Desiccated Coconut x 4 good handful’s
Salt x 2 Tbls
Sesame Oil x 50ml
Preparation
1.Do “Mise en place”. 2.Slice Onions, smash Lemon grass and chop the coriander. Heat oil in pot and combine in the above in to hot oil and sweat off. 3.Add paste and cook out or 2 minutes. 4.Add coconut cream and water. Bring to the boil. 5.Remove from heat Add decasinated coconut to thicken. 6.Combine the spinach into pot with wooden spoon and salt to taste. Allow cooling. 7.When cooled, remove the lemongrass & discard. 8.Decant into jugs, day dot lid & F.I.F.O. into the cool room.
