Ingredients

1 cup Jasmine Rice (rinsed with water)

1 1/2 cup water

1 tablespoon sugar

1/4 teaspoon salt

2 Kaffir Lime leaves ( order online and freeze)

2/3 cup coconut milk

1 lime (rind grated and juiced)

Preparation

Place dry rice in fine mesh strainer and rinse with cold water. Combine water with sugar and salt. Place water, rinsed rice, and kaffir leaves in a small saucepan with tight fitting lid. Bring to a boil and quickly turn to lowest simmer for 5-8 minutes. Take off heat and keep covered. Before serving mix in coconut milk, grated lime rind, and juice. Place over low heat until heated through, and serve.
