Ingredients
1/2 cup Farmhouse® Long Grain White Rice
1 cup water
2-1/2 cups milk
1 cup canned unsweetened coconut milk, stirred well
1/3 cup sugar
1/4 teaspoon salt
2 teaspoons grated lime zest
2 Tablespoons lime juice
1/2 teaspoon vanilla
Preparation
Place rice and water in medium saucepan with a heavy bottom. Bring just to a boil and then reduce heat to low boil. Cover and cook until liquid is absorbed, about 15 minutes. Remove from heat and add remaining ingredients except the vanilla. Mix well. Return to heat and cook over medium low heat, stirring frequently until thickened, about 40 minutes. Add vanilla and serve warm.
