Ingredients

3 egg yolks

3 egg whites

1 1/2 C milk

1 C sweetened coconut

1/2 t cream of tartar

2 T flour

1 1/2 C sugar

3 T sugar

1/2 stick butter

1 t vanilla

1 graham cracker pie crust

Preparation

Filling: Stir together egg yolks, milk, flour, 1 1/2 C sugar, and butter. Cook until mixture thickens, constantly stirring. After the filling thickens, add most of the coconut to the filling mixture, reserving only enough to decorate the meringue. Pour into pie shell.

Meringue: Beat together cream of tartar with egg whites until still. Add vanilla and 3 T sugar. Top cooked mixture with meringue, sprinkle with coconut, and cook at 350 degrees until golden brown.
