Ingredients
4 chicken breasts, rinsed and patted dry
1-1 1/2 cups Panko bread crumbs
1/3 - 1/2 cup fresh oregano, cut into pieces (depending on your flavor preference)
1/4 cup organic coconut, shredded
1/3 cup unrefined coconut oil
3 eggs, beaten
1-2 teaspoons sea salt
1/2 tsp pepper
Preparation
Thoroughly mix bread crumbs, fresh oregano, coconut, and salt and pepper to taste in a shallow dish
Beat eggs into a separate, shallow dish
Heat unrefined coconut oil in non-stick pan on med-high heat
Dip each chicken breast into egg mixture and then dredge in bread crumb mixture. Place in heated oil.
Cook chicken about 7 minutes each side, or until juices run clear.
