Ingredients

1 C. Medium Grain Rice

2 C. Water

1/4 tsp. Salt

2-1/2 C. Unswtnd. Coconut Milk

1-1/2 C. Whole Milk

1/2 C. 1/2 & 1/2

1/2 C. Heavy Cream

2/3 C. Sugar

1 Tsp. Coconut Extract

1 Tsp. Vanilla Extract

Preparation

Cook rice in water with salt in large heavy sauce pan 15-20 Min. until most water is absorbed but not dry. Whisk coconut milk in bowl well until completely mixed before measuring. Whisk in all other ingredients EXCEPT Vanilla Extract.

Add to rice in saucepan, increase heat to medium high, bring to a simmer, then reduce heat and simmer for 30-50 minutes stirring frequently. Simmer until well thickened and teaspoon can just stand in pudding.

Remove from heat, stir in Vanilla Extract and enjoy.
