Ingredients
2 T butter
2 onions chopped
1 lb medium shrimp, shelled, deveined and roughly chopped
1 carton chicken or vegetable broth
1 400 ml coconut milk
generous pinches of salt
1/4 cup shredded unsweetened coconut
Preparation
In a large pan melt butter over med heat. Add onion and cook, stirring occasionally for 5-8 min until softened. Add shrimp, coconut milk and broth. Cover and simmer for 5 min. Taste and season with salt. Serve garnished with toast coconut.
