Ingredients

1/2 cup white chocolate chips

1/2 cup dried cranberries

1 cup shredded coconut

14 teaspoons softened butter

3 cups oats

1 teaspoon vanilla extract

1/2 granulated sugar

3/4 cup packed brown sugar

1 teaspoon baking powder

1 teaspoon ground cinnamon

1 egg

Preparation

  1. Preheat oven to 350 degrees.
  2. Blend sugar and butter together.
  3. Add vanilla, baking powder, cinnamon and egg.
  4. Blend well.
  5. Add white chocolate chips, cranberries, shredded coconut and oats; Fold in.
  6. Drop mixture on un-greased cookie sheet in i tablespoon spoonfuls.
  7. Bake 8-10 minutes.
  8. Take out and let cool.
