Ingredients
4-4-6 oz. cod fillets
1 cup grape tomatoes halved
1-1/2 tbl. drained capers
6-8 kalamata olives roughly chopped
1 large lemon juiced
1/2 cup fresh parsley, chopped
salt and pepper to taste
Preparation
Preheat oven to 400F. Line oven proof pan or cookie sheet with parchment paper. Pat fillets dry and place in pan. Mix remaining ingredients together and place on top of fillets. bake 10 minutes or until fish flakes easily
optional: drizzle with a small amount of canola or olive oil
