Ingredients

1 tsp olive oil

1/2 cup sliced onion (rings)

1/2 cup diced red bell pepper

1 garlic clove minced

1 cup chopped tomato

1 Tbs capers

1/4 tsp ground cumin

1/8 tsp crushed red pepper

2 6oz cod fillets

Preparation

Heat oil in lg nonstick skillet over med-high heat. Add onion, bell pepper, and garlic. Saute 2 minutes. Add tomato, capers, cumin, red pepper. Cook on medium heat for 5 minutes. Add fish. Cover and cook 10 minutes.
