Ingredients

1 1/2 cup of flour

1/2 cup flax seed meal

1/4 dark brown sugar (packed)

1/4 Splenda sugar

1/2 tsp. of salt

2 tsp. of baking soda

3 tsp. of vegetable oil

1/2 mashed banana

1 cup of strong fresh brewed coffee

1/4 cup of labneh(a very thick yogurt)

Less than 1/4 cup water

Preparation

**Preheat oven to 375

  1. Sift together the dry ingredients (flour, flaxseed, brown sugar, splenda, salt, baking soda)into a large bowl
  2. Put labneh and water into a separate bowl and mix water until smooth.
  3. Add mashed banana, oil, and coffee into labneh/water mixture and mix until smooth.
  4. Add wet ingredients to dry ingredients, stirring until all flour is wet. Do not over stir the batter, you want it to be lumpy.
  5. Using an ice cream scoop add batter to greased muffin tins.
  6. Bake for 25-30 minutes or until done.
