Ingredients
1 1/2 cup of flour
1/2 cup flax seed meal
1/4 dark brown sugar (packed)
1/4 Splenda sugar
1/2 tsp. of salt
2 tsp. of baking soda
3 tsp. of vegetable oil
1/2 mashed banana
1 cup of strong fresh brewed coffee
1/4 cup of labneh(a very thick yogurt)
Less than 1/4 cup water
Preparation
**Preheat oven to 375
- Sift together the dry ingredients (flour, flaxseed, brown sugar, splenda, salt, baking soda)into a large bowl
- Put labneh and water into a separate bowl and mix water until smooth.
- Add mashed banana, oil, and coffee into labneh/water mixture and mix until smooth.
- Add wet ingredients to dry ingredients, stirring until all flour is wet. Do not over stir the batter, you want it to be lumpy.
- Using an ice cream scoop add batter to greased muffin tins.
- Bake for 25-30 minutes or until done.
