Ingredients

ready made polenta

maytag bleu cheese or your favorite-4 oz

cognac 2 tbspn

1/4 crushed cup garlic croutons

fresh chives

extra virgin olive oil

kosher salt/fresh ground pepper

Preparation

slice polenta into 1/4 rounds, crumble bleu cheese and mix gently with a fork with crumbs & cognac. Mound heaping teaspons of cheese mixture on polenta. Mince chives and set aside. Season polenta bites with salt/pepper. Lightly oil a grill pan with olive oil. When almost smoking, grill polenta 2-3 min. until just heated and chees barely starts to melt. Sprinkle with chives and serve.
