Ingredients

1 onion, chopped

2 tablespoons butter

2 pounds tomatoes, chopped

1/2 pound peaches, chopped and peeled

1/2 cup cream (optional)

Tarragon for garnishing

Preparation

  1. Cook onion in butter for 5 minutes. 2. Add tomatoes and peaches. 3. Simmer until the tomatoes break up. 4. Add cream (optional but good), purée and chill. 5. Garnish with chopped tarragon
