Ingredients

1 tbls. butter

1 c. onions, chopped

1 t. garlic, minced

4 c. cucumber, seeded & sliced

2 t. curry powder

2 c. chicken stock

salt

pepper

2 c. yogurt, plain

1 cup cucumber, peeled, seeded, cubed (1/4")

2 tbls. mint, chopped

Preparation

  1. Heat butter in saucepan; add onions and garlic. Cook until wilted (do not brown). Add the next 5 ingredients. Simmer 5 minutes, stirring occasionally.

  2. Put mixture in food processor; pulse to blend to fine texture. Chill thoroughly.

  3. Stir in yogurt, cucumber cubes and mint. Top with mint springs.

TIP: I will try this next time with Greek yogurt.
